A super yummy recipe

3 Tbsp Olive Oil
10 oz. package tofu, drained and crumbled
6.5 oz jar marinated artichoke hearts, drained and torn into bite size pieces
3 oz. sliced black olives, drained
2 ribs celery, sliced
3 Tbsp Vegenaise
Salt and pepper, to taste
Sauté the tofu in the olive oil, in a non stick pan. You want the tofu to turn golden and lose the excess moisture. Season, with salt, to taste. Set the tofu aside, and allow it to cool. In a bowl, combine the remaining ingredients. Once the tofu has cooled add it to the salad mixture. Serve the salad in a pita bread or on sourdough toast. Feel free to adjust the proportions to suit your taste.
I really think you'll like this, even if you think tofu is yucky (I know what you are thinking, but give it a try)
This weeks tid bit. Did you know that it takes 2464 gallons of water to produce 1 LB of beef? It takes 250 gallons to produce 1 LB of soy beans and only 29 gallons of water to produce 1 LB of tomatoes. Interesting, right?

I'm playing a bit of catch up on this latest collaboration of Seth's. I am in LOVE with your paintings. They are so textural, colorful, and layered. I love the energy of the first one. I was especially impressed with how many things I saw in it the more I looked.
