Meatless Monday - Sweet Potato Fries With Chipotle Dipping Sauce

This is one of many delicious dishes that we had on Thanksgiving. These fries scream Fall comfort food.
Sweet Potato Fries With Chipotle Dipping Sauce
1 Sweet potato, peeled and sliced into French fry type sticks
Canola oil, enough to generously coat the bottom of a cast iron frying pan
Sea salt
4 Tbsp Vegenaise
Chipotle chili pepper powder
Pan-fry the potatoes, in a cast iron skillet, in the canola oil. Cook them on low heat so that they cook all the way through as they brown and get crispy. Transfer to a plate with a paper towel to drain off excess oil. Sprinkle with sea salt. Combine the Vegenaise with as much Chipotle powder as you will enjoy. Careful, it is spicy. Serve the fries right away, with the dipping sauce on the side.
Serves 2.
And a tid bit - One egg has as much cholesterol as three servings of beef tenderloin. As I've mentioned before, vegan foods are all cholesterol free.
